New Year’s Eve at Naman Retreat transforms into a sensory celebration named “Ocean’s Sensation” — where the ocean becomes the inspiration behind a vibrant, refreshing, and emotional year-end culinary festival:

• Appetizer & Salad Station: Begin your journey with delicate starters, seasonal Asian–Western salads, and fine cheeses—like a gentle sea breeze opening the festive evening.

• Sushi, Sashimi & Seafood Station: Freshly prepared seafood treasures from the ocean, enhanced with live stations where guests can select and savor the pure, briny essence of the sea.

• Hot Carving Station: Signature year-end roasts and carvings—warm, flavorful, aromatic—served with festive sauces crafted for the occasion.

• Beachside BBQ Station: Charcoal-grilled seafood and meats by the beach, with irresistible aromas blending into the ocean breeze, creating unforgettable moments.

NEW YEAR'S EVE SET MENU (B Lounge Restaurant)

Inspired by the theme “Ocean’s Sensation,” Naman Retreat’s Executive Chef presents a refined New Year’s Eve set menu that guides diners through layers of oceanic flavors and festive artistry:

• Begin with artisan bread served with black garlic butter, followed by pickled tomatoes with mint cream—an elegant, refreshing awakening of the palate.

• The signature seafood starter features thin-sliced Hokkaido scallop ceviche with warm dashi-ginger broth, Oscietra caviar, wasabi cream, and passion fruit dressing—delicate, deep, and full of surprises.

• The warm course offers foie gras tortellini in a rich beef consommé infused with forest mushrooms and truffle oil—comforting, luxurious, and aromatic.

• The main seafood dish showcases butter-poached lobster tail with gnocchi, lobster bisque, black truffle, and champagne foam—succulent, silky, and distinctly ocean-inspired.

• A pink orange & ginger sorbet refreshes the palate before the main course.
• The main meat course features pistachio-crusted lamb loin served with morel mushroom sauce and refined accompaniments—delivering a full, memorable finish for the year’s final evening.
• End the journey with jasmine–passion fruit mousse and caramelized hazelnut crunch—light, fragrant, and romantic like a New Year’s wish.
